Starting from humble beginnings, Brazilian born, Italian raised Carla Pellegrino worked in her mothers catering business starting at age 10 until she followed her own dream of coming to the U.S. to study at the famed French culinary institute in New York City at age 16. While in New York, Pellegrino met then husband Frank Pellegrino Jr. and the pair took New York by storm opening Baldoria restaurant to high critical acclaim.

In 2006 another dream of Carla's became a reality when Carla was asked to lead the culinary team as executive chef in opening Rao's Las Vegas, adding her own culinary flair while respecting the essence of the family's traditional 10 table restaurant opened in 1896.

By this time in her career and thanks in part to successful appearance on Bravo's hit series "Top Chef" Carla became a household name. On the heels of this fame Carla opened her second venue, Britalian Neapolotain Cantina, an intimate neighborhood restaurant focusing on simplistic flavorful Italian home-style cuisine in a relaxed picturesque setting. Her skill and memorable dishes quickly earned Bratalian notable awards, such as the Las Vegas Review Journal's "Best of Las Vegas 2011, 2012, 2013″ and "Best of Henderson – 2011, 2012, 23,14″.

Pellegrino's mantra is "As a chef, I am conscious of cooking healthy food while making sure that I keep Italian cuisine authentic. Italian food is not only about pasta, cheese and heavy cream; authentic Italian cuisine is based upon fresh ingredients made from scratch, lots of seafood, grilled chops, oven-roasted fishes and vegetables cooked in every flavorful way possible."

Pellegrino's abundant passion for simplistic cooking coupled with culinary expertise has earned her acclaimed awards and distinguished invitations to host and cook at the James Beard House five times, and in 2009 was named VIP member of the James Beard Foundation and a Women in Food Honoree.

She has been featured on the Today Show, CBS Morning Show, Fox News National, Throwdown with Bobby Flay (which she won), Food & Wine, Bon Appetit and multiple other national and local news outlets. Today, as Executive Chef of Touché Restaurant & Rooftop Lounge you can see and hear Carla running the kitchen on any given night.
